2015 CABERNET SAUVIGNON
The 2015 Sivas-Sonoma Cabernet Sauvignon is a brilliant ruby red in the glass with bright aromas of blackberry bramble, ripe plum and toasted spice notes. The wine is rich and full-bodied with a silky mouthfeel and packed with juicy flavors of black cherry fruit, sweet vanilla and toasty barrel notes from the well-integrated French oak. This elegant expression of Sonoma County Cabernet Sauvignon pairs well with grilled ribeye steak and fresh heirloom tomato and burrata salad.
Sonoma County has a rich winemaking pedigree stretching back to the early 1800’s. With over 60,000 acres of vineyards and over 450 bonded wineries it has assumed a prominent place among California’s premier grape growing regions. The broader Sonoma County AVA includes some 16 sub-appellations each with their own unique microclimates and varietal specialties. Sonoma has become well-known for the diversity of vines that thrive here. For our 2015 Sivas-Sonoma Cabernet Sauvignon, the majority of the fruit was sourced from the gravelly soils of the Alexander Valley which is recognized for producing sumptuously rich red wines with true character. Additionally, Two Dog Vineyard in Sonoma Valley also made the final blend. This vineyard traditionally produces wonderfully small berries in loose clusters for great skin to juice ratio and concentrated flavors.
The 2015 growing season in Sonoma County was of outstanding quality marked with ideal weather throughout and no issues from frost, heat spikes or rain. The continuation of California’s drought brought a dry winter followed by an early and fairly cool spring keeping overall yields down. Weather was warm and consistent throughout late spring and summer which allowed for full development in the grapes.
Now in our second century of crafting wine in the Sonoma Valley, we continue to be inspired by my grandfathers’ can-do spirit. In every bottle of Sivas-Sonoma we pay homage to our family founders who paved the way for our generation of winemakers and those to follow.
